So this is what’s been up recently.

My life in the bush of Florida

I left Chicago in April to come on site for two projects I've been working on that are past the development stage and in need of my physical presence. Can't do it from my apartment any more. It'll be November by the time I get home.

After designing the menus and kitchens for Cobb Cinebistro Miami and Tampa, now I was staffing and opening the facilities I'd only seen blueprints of in PDF format. Premium high definition movie theaters that serve upscale food. That seems to be the niche I've found myself in. Pretty obscure but I love it.

100 hr weeks only make me feel more vital, not tired. Implementing operations, analyzing and adapting strategies, preparing for the sky to fall, that would be some of the things I do while wearing this particular hat, that of restaurant consultant. I get them up and running properly or fix them when they're broken.

Miami opened, we worked, tweaked and delivered. A few months later, Tampa. Newly opened, I'm currently in the process of watching and making the adjustments necessary to do the same. This doesn't stay fixed or not in need of ongoing help. It takes going back for check ups. Making sure the systems put in place are being adhered to or tweaking them if they are but aren't working as intended.

Alexander the Great conquered the world by following this ethic "Anticipate. React. Adapt." It worked for him.
